In brewing, it plays a vital role in raising residual alkalinity and adjusting mash pH, ensuring optimal enzyme performance and balanced flavour development.

This compound is particularly effective in carbonate reduction — by carefully adding slaked lime to brewing water, brewers can increase alkalinity while controlling mash acidity. However, precision is essential, as excessive hydroxide can create overly alkaline water.
