CALI is one of the most popular yeast strains in both homebrewing and craft brewing—and for good reason. It delivers a clean, balanced fermentation that allows malt and hop character to truly shine. Whether you’re brewing a classic American Pale Ale or a bold IPA, CALI gets the job done with dependable results.
Like all CellarScience yeasts, CALI is eligible for direct pitch, meaning you can sprinkle it straight onto your wort without rehydrating or oxygenating. Each sachet contains 12g of yeast, offering up to 9% more than competing dry yeast packets. Every batch is PCR tested for purity and performance. Although it’s been used by pro brewers for years, CALI has only recently been packaged for homebrewers.
Usage & Dosage:

One 12g sachet treats 19–23L

For larger volumes: use at 0.5–0.8g per litre (approx. 51.3–85.5g per 100L)

Direct Pitch or Rehydrate:
CALI’s high sterol content and aerobic growth process allow for direct pitching—no oxygenation needed. If you prefer to rehydrate:

Sanitize scissors and sachet

Mix 10g sterilized water (29–35°C) with 0.25g FermStart per 1g yeast

Sprinkle yeast into water, rest 20 minutes, then swirl

Adjust to within 6°C of wort temp before pitching
