Flaked Barley
Flaked barley is made from dehulled grains that have been steamed and rolled flat under heavy rollers. This traditional process produces a grain that enhances both flavour and mouthfeel, while also improving head retention and foam stability in finished beers.
Because it is pre-gelatinised, flaked barley does not need to be milled and can be added directly to the mash, making it convenient for brewers. It is most famously used in dry Irish stouts, where it provides the signature creamy body and lasting head. However, it can also be used across a wide variety of beer styles to add complexity, texture, and improved foam stability.
