The Mad Millie Fresh Cheese Culture is the perfect choice for crafting soft and fresh cheeses such as cream cheese, quark, cottage cheese, and chèvre. This Aromatic Mesophilic culture creates a mild, creamy flavour and soft texture, ideal for a wide variety of fresh cheese styles.
This freeze-dried mixed strain culture contains:
Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. lactis biovar diacetylactis, and Leuconostoc.
It’s a gas-producing culture, meaning small air pockets may form in your cheese for a light, airy texture. For a denser consistency, use the Mad Millie Cheese Culture instead.
